Koji Sriracha is a live-fermented sriracha built around shio koji, the same traditional Japanese ferment behind sake and miso.

Fermented chili peppers and garlic meet ripe Fuyu persimmons and smoky Korean sesame oil. The koji brings a foundation of malty, briny umami underneath it all.

Developed in the tradition of Cleveland chef Jeremy Umansky's koji work.
